Spring Smoothie Bowl

It’s officially spring time and the weather is starting to warm up. Not only do we want meals that will cool us off, but a lot of us also want something healthy to maintain that bikini body! Although, let’s be real, every body is a bikini body!

I’m a big fan of smoothie bowls and I have one just about every day. The combinations and flavors are endless which is what makes them so fun and exciting! This smoothie bowl is perfect for the spring time, because of the pretty pink swirls and refreshing taste.

Pitaya, also known as dragon fruit, is giving acai a run for its money! You’ve probably seen pitaya bowls all over your Instagram feeds since it gives your smoothies such a beautiful hot pink color! That’s what I used to make the pink swirls in my smoothie bowl today!

I love this recipe because it’s super simple and it’s delicious! You’ll feel like you’re eating some decadent ice cream when it’s really just some yummy fruits!

To start off this recipe you’re going to want to freeze your bananas overnight so they’re ready to be blended the next day! When freezing your bananas, make sure they have brown spots all over, that way they’re super ripe and super sweet! Eating ripe bananas is also optimal for digestion! Then when you’re ready to make your smoothie bowl use a food processor or a high speed blender. You’re gonna throw your three frozen bananas into the food processor with just enough coconut water to help it blend. You don’t want to put too much because it’ll take away from the creamy soft serve texture! I also added my favorite protein powder from Livwell Nutrition, to give a little bit of a vanilla taste. Adding protein also makes it a great post workout meal.

And then blend!

Once you have your base ready, set that aside and take a smaller blender and throw in your pitaya packet with half of one fresh banana and some water to blend. Get it to a nice creamy consistency so it’s easy to move around in your base to create that pretty swirl! I get my pitaya packets at Whole Foods but if you can’t find them then that’s okay! Just use some raspberries, strawberries, beets, or beetroot powder to get that pink color instead!

Once you’re done letting your inner Picasso shine, it’s time for toppings! Here the options are endless. I decided to used wild blueberries, unsweetened shredded coconut, cacao nibs, raw sunflower seeds and the other half of the fresh banana!

And there you have it a super nutritious and delicious raw vegan smoothie bowl that’s perfect for breakfast or lunch!

Ingredients

Serves 1

  • 3 frozen bananas
  • 1 fresh banana
  • 1 frozen pitaya packet
  • ¼ cup coconut water (or coconut milk, or plain water)
  • 1 scoop of Livwell Wild Vanilla Bean Protein Powder (or 2 tsp vanilla bean powder, or your favorite vegan protein powder)
  • Raw sunflower seeds
  • Cacao nibs
  • Frozen wild blueberries
  • Unsweetened shredded coconut
